docker compose --profile download up --build the --build is very important
and this will only download the data, for whatever reason, it is starting the automatic1111 ui in your case. you should try docker compose down beforehand.
if you want to start the UI
docker compose --profile auto up --build
from stable-diffusion-webui-docker.

Yes, I had done that. It appears that it might have been a docker issue. I have restarted and it is working.
