I personally just commented out the part of IDA's pro.h that redefines snprintf, which brings us to the next problem:
No rule to make target `/Development/IDASDK/8.0SP1/IDASDK/lib/x64_mac_gcc_64/libida64.dylib', needed by `src/idaplugin/retdec64.dylib'. Stop.
On Darwin it's arm64_mac_clang_64 or x64_mac_clang_64
from retdec-idaplugin.

Created a patch that at least works for me on M1 Mac with IDA SDK 8.0 https://gist.github.com/Naville/d2c3127fc5c07ae730645305e10bab96
