Feature Request: Style the guage cards about lovelace-ios-themes

You can do something like:

      - entity: sensor.quarantine_meter_marcella
        max: 100
        min: 0
        name: Marcella
        severity:
          green: 95
          red: 0
          yellow: 80
        theme: Backend-selected
        type: gauge

Also, it doesn't look like you are using this theme... (in your screenshot)

You are right that it does seem to work when setting severity. I was using the theme for my main panel and was present there as well although for particular browser it was set to different version.
