Sorry, I do not know how to do this. I'm trying to manually find where in the ios-themes.yaml I can change the color used but so far no luck

I figured out which less brighter color gives a good visual. Under #Switches add the following line for all themes so with a future update I do not loose this modification and it will benefit all users of having a clearer inactive switch color.
switch-unchecked-button-color: "#B3B3B3"
from lovelace-ios-themes.
