This is not being reflected as the variables are being picked up from @import 'node_modules/bulma/sass/utilities/all'.
A quick search for similar imports shows up in Switch, Tooltip, and Dialog components. Currently these components inherit variables from bulma and hence the overrides don't work.

It is notable that Tooltips were using important SCSS variables including $color (which is most likely to be overridden by user). Switch inherits only $grey-light (which is not often overridden) while Dialog inherits $weight-semibold $radius-large and $size-5 (sometimes overridden). For Dialog, it should be sufficient to allow the user to add styles, rather than finding a workaround to not use those variables.
