It appears that .setData has solved my issue. I have also implemented the Autosave feature as suggested, which has assisted greatly!

I am not sure why the wire:model, doesn't work, there may be some issues with order of execution, etc.

I have tried loading it as well with JS prior to the initialization of the editor

Did you use initalData prop or setData?

I also recommend using the Autosave plugin, rather than change:data as it might lead to performance issues.
