build.sh for mac dmg fails with cannot resolve dependencies with ${javafx.platform} about cryptomator

Reading the linked issue shows that this actually is an old JavaFX parent pom issue, that showed up with a change in Maven 3.9.7 and got fixed by Gluon with Gluon JavaFX 23-ea+20.

Maven 3.9.8 will have some FATAL warnings in the log for issues like this. Since we aren't on JavaFX 23 yet, we can use a work around:

manually specify the javafx.platform property, i.e.: mvn
-Djavafx.platform=linux compile

Downgrading to maven 3.9.6 fixes the problem.

Since github adopted now maven 3.9.7 in its latest macOS runner (see https://github.com/actions/runner-images/blob/macos-14-arm64/20240603.1/images/macos/macos-14-arm64-Readme.md#project-management), i guess we can't ignore this. 🙄
