After a bit more investigation I have found that I ended up answering my own question.
What I needed to do was to add the following line of code:
Application.SetUnhandledExceptionMode(UnhandledExceptionMode.ThrowException);
This has now resulted in the expected behaviour of the crash being logged on the user's system, as well as an "ApplicationX has stopped working" error message appearing rather than an unhandled exception error message appearing.
