This is now also probably an unrealistic example.

If the WooCommerce Stripe addon was in test mode beforehand you should instead use the wpmdb_preserved_options filter to preserve that setting between migrations.

Your example only works if they're importing pulling a live DB into a completely fresh install of WordPress. Even if so, that would only happen once per site. As an ongoing thing, they should use the aforementioned filter instead to do things like this.

What about a really really simple example:

When the local DBs database is replaced it triggers an email to the admin.

Happy to go with a different example though if you'd like.

Could you give this a bit of a test? I removed the mail config from my local environment and it's a bit of a pain to set it up again.

Seriously? You have got to stop doing this. Test it yourself and ask me to test it. I uncommented the add_filter() line and there was a missing parentheses.
