This is probably very easy to do since I'm pretty sure there is already the processor in JetBrains' code, so it's just adding the option in the plugin and wire the processor.
I have no time to work in this now but it could easily fit in the next release

Yep, seems that is is pretty straight forward. The (very small) pull request #65 adds the ability to add missing @Override annotations.
