@ashimolin I'm sorry but I'm going to close this feature request as "won't fix".
EasyAdmin already supports multiple entity managers and we always find the EM associated to each entity before doing any database operation. But, this selection is automatic. Allowing to configure/change the EM explicitly looks like a too niche feature to me.
I'm sorry but I hope you understand that we must say "no" to some features in order to make the project sustainable. Thanks.
