You can try setting the log level to DEBUG in logback.xml

<logger name="com.erudika" level="INFO"/>

Also the command-line argument for this is: -Dlogging.level.com.erudika=DEBUG
Or you can edit the source code and add logger.info("user: {}", userObject);

Update: this is not possible for the access log, as far as I know... apologies for the confusion on my part.
