Based on your description I'm guessing you're on Windows and you have the default completion set to 'context'. That combination makes supertab think that the \ should complete filenames, so for latex files you'll need to change the default completion type by setting b:SuperTabDefaultCompletionType to either <c-p> or <c-n> in an ftplugin for latex. Then, if you haven't already, you can add scanning of dictionary files using set complete+=k (see :h 'complete' for more options).

You suggestion works well. Initially I was thinking that I would have to do something more complicated like somehow set the \ char to have the same effect has the dot (.) char has in python (so it would trigger some kind of omnicompletion) and then write a function that would be the omnicompletion function (I have no idea how to do this, but I would guess it would be something like given a match return a list of matching words from the dictionary file).
