I'll work on this a bit later today. I've got what I think is a working knife config.

This is done. I've backfilled all the versions since 1.6.1.
A summary of what I had to do was
- Reset my user and validation keys on https://manage.opscode.com, since I'd lost track of the old ones
- Download those and put them in ~/.chef/
- Get a knife.rb file from https://manage.opscode.com
- I'd previously authorized my Hosted Chef account with supermarket and Jake made me a contributor on the cookbook
- I checked out https://github.com/SimpleFinance/chef-zookeeper/ and then did 'git checkout $TAG' for each version and ran 'knife cookbook site share zookeeper Other --cookbook-path ~/code/cookbooks/' for each version to get it uploaded

GAH, manage.opscode.com. I knew that generate knife.rb stuff existed somewhere but kept looking on community. Why it's not there as well is beyond me.
