yeiks, tricky one :). You need the slash escaped actually, otherwise echo will remove the quotes:

command: 'echo \\"Erik\\"'

[edasque]

but it doesn't when I type:

echo "\"Erik\""

on my command line, right?

true, which is why you need to escape those slashes - so they make it to the command line, so to say.
If you use:

command: 'echo "\"Erik\""'

what ends up in the shell is:

echo ""Erick""

[edasque]
