One more thing.To make StarlingInputAdapter work flawlessly with Gestouch, you'll need to use this hit tester instead of StarlingTouchHitTester:

    private var _starling:Starling;

    public function StarlingStageHitTester(starling:Starling) {
        if (!starling)
            throw ArgumentError("starling has to be set up before creating StarlingStageHitTester");

        _starling = starling;
    }

    public function hitTest(point:Point, possibleTarget:Object = null):Object {
        if (possibleTarget && possibleTarget is DisplayObject)
            return possibleTarget;

        return _starling.stage.hitTest(point, true);
    }
}

I think it would be a good idea to add these classes to Gestouch and use them instead of the ones used now.
