I should be able to update SFNativeRestAppDelegate to allow for the developer to override the authViewController. It's 95% of the way there; there are some internals that need to be updated, though.
Incidentally, if you just need to have your own SFAuthorizingViewController.xib file, you can create your own with the well-known name; we only ship the NIB file in the template apps, so making your own would not interfere with the SDK. But that's not often sufficient, so I'll make sure you can work with the VC itself as well.
