If you're going to use developer stuff, at least read the warnings in the readme. I clearly said the remount only works on iOS 11.2.x and needs modifications for iOS 11.3.x Your device runs iOS 11.3.1...
Try a hard reboot. It should fix the fs.

Seems just to be Orisis on iOS 10.3.1 that doesn't remount the file system, not the iPhone's fault
Other that that, Your jailbreak looks promising, exploitation works really well š

Mount struct: file change to a normal rw works,
File change to a snapshot with mnt_flag rw fail.
