I think you can create it with something like this
channel = client.channel("messaging", data={"members": ["user_id_1", "user_id_2"]})

since based on the docs

You can achieve this by leaving the channel ID empty and provide channel type and members.

You might want to check the test cases if you need some other examples e.g in your case is
test create channel without id
