🤔 not sure what dependencies would need to be update -- everything should all still work with the newer Go version.
But yep, I'm down to move to 1.21.x and let's see if anything breaks.

The stable release version of Go is now 1.21.6, as seen on the official Go website. Shall we upgrade to version 1.21.6?

1.21 will require a number of dependencies to be upgraded as well, so it's a longer task. We'll need to upgrade eventually, so probably now is as good a time as any.
