Just posting a update to this; I manage to resolve the original issue and it was something I wasn't fully expecting but should have thought about it much earlier...
In my case, I followed all of the instructions as per the readme and couldn't get my cameras to appear in HomeKit even though I could get them to work by configuring them under the camera-ffmpeg plugin
Turns out for this plugin to work any/all cameras that are associated with the cloudkey MUST have their RTSP protocols enabled (makes sense) AND be fully operational ie. not "disconnected"
I was experimenting with installing a new Dome G3 in my backyard and even though I paired it to my cloudkey and it appeared in the list it was "disconnected" (not plugged in) when I was trying to set this plugin up.
After I plugged all cameras in and ensured their respective RTSP checkboxes were enabled the plugin began to work!
Now my only issue is, two of my cameras (I have 8 at home) refuse to show up even though they are configured the same as the others ... A new seperate issue.
