Guess you mean general purpose input ports (GPI), either digital or analog for the above purposes.
In terms of hardware, maybe the design we have for the CAN magnetsensor could fit. There is already an ESP32-C3 with several ports that can serve for this purpose.

Today there is one RJ45 connector, hence we could alter the design to have instead of the 3D magnet sensor on board, an input protection and several 2 pin connectors to make all eight IO port that exist accessible to the external world,
and place this at a strategic place, maybe somewhere in the middle of the fuselage where most of this things are sitting.
For the other things, when its a digital signal like locked/open maybe an encapsulated reed-contact like used for window and door alarms could do the trick.
For the trim position, a unit similar to the flap sensor might be an option.

For gear and airbrake, if Flap-Sensor or serial S2 is not used, there is already a basic solution for a gear warning including the SW part to alert (described in handbook), without any external hardware needed.
