I think I found what was causing it. The jekyll-minify-html gem seems to bring development down to a crawl. To get around this I setup the following plugin to only execute the slow gem under production builds. Reference: jekyll/jekyll#1219

Hope this helps others!

Plugin _plugins/application_mode.rb

require "bundler/setup"

# JEKYLL_ENV=production bundle exec jekyll build

class Jekyll::Site
  attr_accessor :env
end

class Env < Jekyll::Generator
  priority :highest
  def generate(site)
    site.env = ENV['JEKYLL_ENV'] || 'development'

    if site.env == 'production'
     Bundler.require(:production)
    end
  end
end

Gemfile

source 'https://rubygems.org'
ruby '2.0.0'
# ------------------------------------------------------------------------------------
# >>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>
# ------------------------------------------------------------------------------------
gem 'jekyll'
gem 's3_website'
gem 'kramdown'
gem 'guard-jekyll-plus'
# ------------------------------------------------------------------------------------
# >>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>
# ------------------------------------------------------------------------------------
group :production do
   gem 'jekyll-minify-html'
end

from guard-jekyll-plus.
