So I stumbled upon https://jitsi.github.io/handbook/docs/community/community-instances/ which led me to finding some instances who don't have moderation enabled. I think this solves my issue, I just need to find out whose instance would be ok with me incorporating it in my app

I'm using the meet.jit.si server, which requires a moderator. However right now when I click Log-in, it takes me to web-cdn.jitsi.net which redirects users to download the Jitsi official app.

Is there a way around this that doesn't involve self-hosting a server? As a cherry, is there a way to customize the moderator message so I can explain to my app users better that they too can be their own moderator?

There isn't, sorry. Our infra will redirect to our app.
