Actually, how about a different approach? Singleplayer worlds in Minecraft already remember what version was being used last to play them. How about making it possible to set per world and per server what version you want to be used? So for singleplayer worlds show a version selector while setting up the world and for servers show a version selector while entering the IP and stuff. Maybe for servers you can even live check the supported versions (while entering the IP/address to join) and only show the supported versions in the selector?
Of course after the world has been generated and the server saved, you should be able to edit the wanted version later on.
