The echo bot doesn't record anything, pingstat is the aggregator. It already records everything, you can request the raw data to make your own stats (e.g. https://maubot.xyz/_matrix/maubot/plugin/pingstat/!ping-v9:maunium.net/stats.raw.json for the past week in the main ping room)
