Aside from the exporter version, the exact BuildKit daemon version should be recorded in the provenance too.

Why? That would assume that users need to get the same buildkit version to replay the build. But that should not be necessary and BuildKit should guarantee backward compatibility. The environment/conditions for the build should be defined by the build definition, not by the buildkit version.
