I figured this out. Not sure what the issue was honestly, though one thing to point out about native script in general - it's a bad idea to set a color property on a higher level than an image view in css/xml. If you do, the image will just fill with that color and you won't see the actual image.

selected.getImage().then(function (imgSource) {
                    console.log("beginning selected");
                    imager.src = imgSource; //Where imager is my image view. 

You can also save to the image to a local file doing something like this:

                    var photoID = Math.random().toString(36).substr(2, 9);
                    
                    
                    var photoID = photoID + ".png";
                    var folder = fs.knownFolders.documents();
                    var path = fs.path.join(folder.path, photoID);
                    var saved = imgSource.saveToFile(path, enums.ImageFormat.png);
