Если не опечатка, то правильно так - display_errors.
Попробуйте вывести ошибку через Апач, чтоб убедиться, что проблема в настройке nginx.
Установите fastcgi_intercept_errors в off (nginx-bp/enable/errors.conf)
ini_set('display_errors', 'on') и error_reporting(E_ALL)
Для теста попробуйте открыть простейший php-скрипт в котором кидается исключение или делится на ноль.

это я ошибку допустил здесь в тексте. руками набирал. fastcgi_intercept_errors выставлен в On. позже попробую проверить ваше предложение. На текущий момент выставил апач параллельно для дебага.
Все ваши шаги в течении 2 суток проверю
