Nevermind, I figured out the problem. It's because I have two sort_order fields, one on the performances table, and one on the pivot table. The pivot table seems to be looking at the sort_order field on the performances table, and not the one on the pivot table. So that's why the ordering didn't work.
For now I renamed the sort_order field on the pivot table, but I guess the real solution is to look at the right table. Not sure how yet, but that has nothing to do with this plugin.
