Unfortunately this is a sass limitation when working with @extend placeholder selectors and rules within @media blocks. You might have seen this message during compilation:

  @extending an outer selector from within @media is deprecated.
  You may only @extend selectors within the same directive.
  This will be an error in Sass 3.3.
  It can only work once @extend is supported natively in the browser.

In your example you actually don't need to call the cssowl-sprite-replace mixin repeatedly.
All that changes seems to be the element on the sprite. This means you only need to update the x, y, width & height.

    @include cssowl-sprite-replace($sprite-icon-logo-mobile);
}

@include breakpoint(tablet) {
    .logo {
        @include sprite-icon-logo-tablet-size();
        @include sprite-icon-logo-tablet-position();
    }
}

@include breakpoint(desktop) {

        @include sprite-icon-logo-desktop-size();
        @include sprite-icon-logo-desktop-position();
    }
}
