Add documentation for `SKIP_HOST_UPDATE`

The Flatpak version of Discord disables the built-in update check of discord by editing `~/.config/discord/settings.json` and adding `"SKIP_HOST_UPDATE": true`. Doing this allows Discord to always start, even when the daily `apt` updates haven't run yet. Discord will still start normally, and one will get the update during the next regular update cycle. I only found this setting by accident, and I think this might proof useful to other users as well. Usually I'd have opened a PR, but your README specifically states that you do not want PRs for that :)

Actually, I'm ok with a README fix for this. The case I don't want PRs for is various folks were submitting PRs with random lumps of bash that kinda automated the steps in the README, but with a complete lack of error handling and from a "how much support does @palfrey have to give" perspective they increased my likely work, not decreased it. This looks like it should usefully reduce the number of "why haven't you updated" questions I get (which given it updates every 3 hours, isn't that many), so happy to get a PR for this.
