Yes, absolutely. In 0.4.0-wip branch we are working on this. Skipping defaults and recording custom activities will be in there ;)

Duplicate of #21, you can provide :except, :only and :skip_defaults => true options to #tracked method to select which actions of the three (create, update, delete) automagically create activities.
Convenient way to create custom activities will be done in #21.
