Wich function are you using? osrm::osrmRoute()
? osrm::osrmIsochrone()
?
Do you send requests to some online osrm server or do you run your own server in a docker container?
If you are running in docker, then perhaps you created the graph with car.lua profile and maybe this causes the osrm engine to return driving directions
For me options(osrm.profile = "walk") works just fine for osrmIsocrhones, however I am running my own server with foot.lua profile.

Thank you for the quick response.
I am using osrm::osrmRoute() in RStudio, default server.

The OSRM demo server seems to only use driving distances. See
- https://router.project-osrm.org/route/v1/walk/13.414167165756226,52.52167215019524;13.4197763,52.5003103?geometries=geojson&alternatives=true&steps=true&generate_hints=false

In fact I think that whatever the word you put in the request you obtain the same, driving, distance.
