SLP to the servers on command? Very expensive method though.

If querying is enabled (on the game server), the proxy could retrieve all kinds of info on a server the same way minecraft server list websites do.

This would be quite expensive, however. If you were to implement it, it might be best to not have this behavior enabled by default.
