What you are mentioning is the symbol associated with a switch. A switch can have a certain symbol (Switch, Light, Fan) which you can change in the Home App. This symbol is not part of the HomeKit-Accesory-Protocol. It is an setting which is set in the HomeKit database on your device. So the accessory itself cannot set or change this symbol.
However you could also expose a lightbulb service (instead of a switch service). This is a HomeKit service designed to expose light characteristics (like Hue, Brightness, On/Off, etc...). I'm currently working on a homebridge-http-lighbulb plugin, which has similar or even the same configuration options like this plugin, for easy switching between different services.
