It's a great question. I would convert the projects to v7/Swift2, and deal with the differences. In general, all code is still valid Swift 2, but of course there are exceptions (eg. print instead of println, protocol changes, and of course API changes).

Open Source contributions to start updating the materials and projects are welcome; right now I myself am working on converting the documents to abandon non-standard fonts. This is time consuming, but needs to be done to make it easier for others to contribute long-term.
