Because plain pixel manipulation works fine, and it's a big task to reimplement all the graphics code to use OpenGL.
JoJoBond has been doing some OpenGL stuff, and has got most of the game working with it. But graphics in the normal version don't take much CPU time compared to the physics calculations, and for me, the OpenGL version currently runs more slowly.
