This seems to be related to GITHUB markdown rendering API.

Here is a sample curl request

As you can see the checkbox is not rendered. If we switch the mode to gfm it will render.

gfm mode is used to render a document as user-content, e.g. like user comments or issues are rendered. In gfm mode, hard line breaks are always taken into account, and issue and user mentions are linked accordingly.

In markdown mode, content is rendered as plain Markdown, just like README files are rendered.

Alternatively, we could switch to a different Markdown rendering engine.
