Relax mdformat and mdit-py-plugins requirements

Hi, with the recent release of mdformat v1, could you please consider relaxing the version constraints? There were a number of projects impacted (https://github.com/csala/mdformat-simple-breaks/issues/3, https://github.com/butler54/mdformat-frontmatter/issues/37, https://github.com/executablebooks/mdformat-footnote/issues/12, etc.) ``` uvx --with="mdformat-wikilink>=0.2.0" "mdformat==1.0.0" × No solution found when resolving tool dependencies: ╰─▶ Because only mdformat-wikilink<=0.2.0 is available and mdformat-wikilink==0.2.0 depends on mdformat>=0.7.16,<0.8.0, we can conclude that mdformat-wikilink>=0.2.0 depends on mdformat>=0.7.16,<0.8.0. And because you require mdformat==1.0.0 and mdformat-wikilink>=0.2.0, we can conclude that your requirements are unsatisfiable. ```

Thanks! Merged & cut a new release. I just realized you previously asked me to support Python 3.8, and I just dropped it again. But given that mdformat also supports 3.10 and up (https://github.com/hukkin/mdformat/blob/master/pyproject.toml#L15), I guess it should be ok? LMK if you need me to change that again.

No, that is fine! As long as the minimum is consistent with mdformat
