For deleting the last point in a line/polygon layer you can simply press the 'delete' or 'backspace' key.
Deleting a point after finishing can be done via the Vertex Tool. You can select the vertex you want to delete with the right click and drag selection. The vertex you have selected will be blue. Pressing the 'delete' or 'backspace' key deletes the selected vertex. This also works with multiple vertices.
