The solution lies with wrapping the method within a try/except block so that it attempts to render the image object first and if that fails, it then just proceeds.

The consequence of this is that None is shown as a p[laceholder within the admin panel for where an image object would usually be rendered, however this is a desirable outcome, so no further handling required.

class PostAdmin(admin.ModelAdmin):
    ...
    def post_image(self, obj):
        try:
            img_width = obj.image.width * 0.25
            img_height = obj.image.height * 0.25
            return mark_safe(  # nosec
                f"<img src='{obj.image.url}' width='{img_width}' height='{img_height}' />")
        except OSError:
            pass
