I can't think of any reason not to put toString() implementations on those classes. Could you send me a pull request?
WireMock will capture requests for findAll/verify even if they're not stubbed, and will return a 404 in response. Are you seeing the 404 for the URL you're testing against or the findAll call?

Yep, getting 404 but unfortunately that fails my test (because I check in code for an OK response). No worries

When I want to override the default behaviour I set up a single, broadly matching stub (i.e. urlPattern: ".*", method: "ANY") at priority 10.
