To anyone that sees this.

I found a way around this that via the begin_analyze_document() function.

Essentially the function returns in the unique datastructure mention above. But, per the AnalyzeResult Class, you can use the imbeded to_dict function to convert the analysed result to a dict.

In this format, the DocumentFieldValue is cast as an imbedded dict value (within a list dicts or dicts within those dicts, depending how funky your get with your azure model).

An example basic scenario in a azure function or script would be as follows:

    poller = document_analysis_client.begin_analyze_document(
        model_id=model_id, document=source
        )

    result = poller.result()

    data = result.to_dict()
