I analyzed this issue and discovered that this is probably not caused by the app. It seems like the android system returns a faulty screenshot via VoiceInteractionSession.onHandleScreenshot when screenshotAssistant is triggered while having an app open in landscape mode.
I reported this to Google. The relevant issue can be found here and is currently investigated by their engineering team.
