Wrong Address for GPIO5_DIR

The address 0x49056094 is not responsible for setting the pin direction of the GPIO pins.
This address is the GPIO_SETDATAOUT of the GPIO5 module is just a wrapper for the GPIO_DATAOUT register. If you write 1 to the GPIO_SETDATAOUT, it sets the same bit on the GPIO_DATAOUT register. The GPIO_DATAOUT is just writing the value to the pin and not setting the direction.

You need to set/unset the bits on the GPIO_OE register (0x49056034 for GPIO5) to set the direction of the pins (input or output). See the page 3409 of the technical reference manual. The example is working because the default value of the GPIO_OE register is 0x000000
