CTRL-C doesn't exit container

Running sculpin serve shows the following output:

Development server is running at http://localhost:8000
Quit the server with CONTROL-C.

However, the container can not be canceled.

docker kill can be used as workaround.

Documentation for custom port

The current installation instructions hardcode port 8000. As such, it's not possible to launch a second instance.

The --port configuration has no effect on the outside of the container. Also, the exposed port will have to be updated as well.

Perhaps read this from a PORT env and default to 8000?
