Test running multiple instances with multiple joysticks

I'm not convinced that this code will work with multiple nodes and multiple joysticks right now. I was not able to test with two devices at once, and I'm not sure that the joy_node parameters in the joy_translator.py launch file are set correctly. "dev" may be the wrong key for the parameter we want to override.

It's confusing because there's a joy node: https://github.com/ros-drivers/joystick_drivers/tree/ros2/joy
and a joy node for Linux: https://github.com/ros-drivers/joystick_drivers/tree/ros2/joy_linux

Task: figure out which one we are using and if the parameters are set correctly in the launch file. Run two robots at once with two different controllers. Override the controller names for each robot and ensure that they work independently of each other.
