Anything is possible, but if "All Mail" is hidden it might mislead the user into thinking they're doing a full backup when in fact they could be only backing up a small percentage of their total mail (depending on what folders they have accessible through IMAP).
I understand why you would want to hide "All Mail" when using traditional (IMAP based) backup methods. BaGoMa however is smart about how it does the backup, so that every message is only backed up once, no matter how many labels it has.
