I've created color variables with the following names:
Color/Background
Dark/Background
and changed Appearance settings to use Color for light styles and Dark for dark styles.

When running the plugin (e.g. Appearance -> Dark Mode), the plugin gets stuck on Running Appearance. The console shows the following:

Hello there! This plugin is awesome. Question on licensing: I see there is no license specified in the repo. Are there any restrictions on using this code like for redistribution as-is?

I started using this plugin, but I found out it does only about 80% of the work. For whatever reason, it doesn't change all the styles. It's really random too. I select a frame and it changes about 80% of the styles. Then I change some of those it hasn't, try again and it will change a few more and so on.
